There are many mushrooms in the forest this year. We have picked many white mushrooms and put them to freezer to keep them fresh for use during winter.
You will need:
- 1 cup of buckweat
- 2 cup of water
- 1 onion (better yellow than red)
- 1-2 cup of mushrooms (fresh or frozen. if you have dried mushrooms put them to water 1-2 hour before cooking)
- Sunflower or any other vegetable oil
Take a pan and roast onion with 1 teaspoon of sunflower oil till onion becomes yellowish and transparent.
Put onion into the other pan.
Put the mushrooms on the same pan where you have roasted onion and cook them for 15-20 minutes.
Add mushrooms to the pan with onion. Add buckweat to the pan with onion and mushrooms. Add salt for your taste (I take 1/3 of teaspoon) and mix.
Add 2 cup of boiling water and cook under the cover at low heat for 20 minutes till the buckweat absorbs the water.
Your "kasha grechka" is ready. Serve with vegetables.
